You may have guessed it already from this expression’s name, but the Isle of Jura Seven Wood is made with whisky drawn from seven different types of cask. There’s American white oak, and six other French oaks, Limousin, Tronçais, Allier, Vosges, Jupilles, and Les Bertranges. Intriguing stuff, this.
Tasting Note
Nose:Â Nutmeg, strawberry jam on toast, Brazil nuts.
Palate:Â Lemon peel, sawdust, apricot and cooked peach.
Finish:Â Heavy vanilla. A hint of smoke develops.
Food Pairing:Â Scallops with Black Pudding and Beetroot Salad (Western), Szechuan Scallops (Chinese), Steamed Abalone in Sake (Japanese)
